Herbert (Herb) Appenzoller, 94, passed away on Thursday, April 9, 2026, at Country Meadows, Bethlehem, PA, surrounded by his loving family, both near and far. He was the dedicated husband of Rosaleen (Huber) Appenzoller and they celebrated 69 wonderful years of marriage. Together they raised their family in North Haledon, NJ, spent most of their retirement years in Martinsville, NJ, and have called Bethlehem, PA their hometown for the last decade.
Herb was the son of Louise (Bohrer) and Frank Appenzoller, born in Manhattan, NY, on May 31, 1931. He lived with his parents until 15 months old. Herb was lovingly raised in Zweibrücken, Germany by Matilda (Bohrer) and Franz Xaver Paul, along with their children, Walter and Hildegard, until he was 16 years old. After WWII, Herb returned to his birthplace of New York City, where he resided with his dear aunt and uncle, Elizabeth and Ludwig Bohrer.
He could be found playing soccer for his beloved German Schwaben Sport Club in the Bronx, New York. Through this membership, he forged many valued and lifelong friendships. Additionally, he was an avid supporter of the Brooklyn Dodgers. When the Dodgers left town, he became a NY Mets and Rangers fan, and a proud season ticket holder of the New York Cosmos, where he could be found many Sunday afternoons enjoying games with family and friends.
He served in the US Marine Corps during the Korean War in the Air Repair Squadron and was a proud veteran.
For 40 years, Herb was a member of the executive team of a family restaurant organization operating various restaurants in the New York City Financial District, including the Delmonico's the Captain's Ketch, and the Parlor Car, and Caboose restaurants, retiring in 1998. He was proud to work alongside his father-in-law, Frank Huber, brother-in-law, Edward Huber, and his dedicated business partner, Henry Lopez, as well as their other valued business partners, Al Gonzalez and Frank Kedl. Proudly passing the organization to a third generation, with Kenneth Appenzoller and John Henry Lopez at the helm.
Herb gave back to his community. He was honored to be part of the inaugural coaching staff of the youth soccer program in North Haledon, NJ, where he served as a coach for many years.
He was an active member of St. Paul's Catholic Church and choir in Prospect Park, NJ. Music was in Herb's heart, and he could often be heard whistling while wood-working or cooking in the kitchen.
He volunteered his time at the Neumann Prep High School's Bingo program in Wayne, NJ, and in retirement at Runnels Rehabilitation and Care Center in Berkley Heights, NJ. In both programs, using his restaurant expertise, he acted as purchaser and manager of the concession and food services.
He was the loving father of Kenneth Appenzoller and his wife Paula of Colorado Springs, CO, Elyse Costello and her husband Kevin of Bethlehem, PA, and Leann Watson and her husband Joseph of Princeton, NJ. He took pride and beamed when surrounded by his 8 grandchildren, Lindsey (Jeff), Kevin (Danielle), Collin (Dylan), Erin (Hayden), Aleah (Carl), Mia, Morgan, and Sydney, as well as 5 great-granddaughters, Julia, Lena, Audrey, Quinn, and Clara. He was active in supporting their many sports activities and interests.
He was preceded in death by his parents, brother Walter, and his wife Gertrude, and survived by his loving wife, Rosaleen, sister and brother-in-law, Hildegard and Sepp Bodenmiller, his brother-in-law and wife, Ed and Marty Huber, his children, nieces and nephews, grandchildren, and great-grandchildren.
A Mass of Christian Burial will be celebrated on Friday, June 12, 2026, at 11 am, at Our Lady of Perpetual Help Catholic Church, 3219 Santee Road, Bethlehem, PA 18020. A Celebration of Life to follow.
